Lentil Salad with Prawns recipe
This dish is very simple and quick to prepare. Especially if we use canned lentils, already cooked and the shrimps are also bought cooked. This way it will take us only a few minutes to prepare this wonderful salad.
As for the rest of the ingredients, we have chosen to add crab sticks, avocado, cherries, spring onions and corn. But remember that, as in all salads, you can add a multitude of other ingredients or change the ones you want for others. For example, bell pepper or cucumber will also look great. Or add some natural mussels and a can of tuna to give a more marine touch to your salad.
It’s a matter of trying and finding your favorite combination.
As the lentils are small, we are going to chop all the ingredients well. So that the dish has more harmony. If you choose this option yourself, remember to leave some shrimp unchopped to decorate the dish at the end.
Lentil Salad and Prawns Recipe
Ingredients
- 200 g Cooked lentils
- 8 Cooked prawns
- 4 Crab sticks
- 10 Cherries
- 1 Avocado
- 1 Spring onion
- 100 g Corn
- Vinegar
- Extra virgin olive oil
- Salt
Instructions
- Let's start by rinsing the lentils if they are from a jar. We put them in a large colander and wash them well under the tap. Drain them and put them in a large bowl.If we have cooked them ourselves, it will not be necessary to wash them, draining them well will be enough.
- Continue peeling the prawns. Reserve a couple to decorate at the end. The rest, we will cut them into small pieces to taste. Add them to the bowl.Do the same with the crab sticks.
- Add the washed and halved cherries and the corn.Peel and chop the avocado and the spring onion. Add them to the bowl.
- Now that we have all the ingredients ready, we prepare a vinaigrette with oil, vinegar and salt. The quantities are to taste, it will depend on how strong you like the vinaigrette.We put these ingredients in an airtight jar, shake well and dress our salad. Mix well and serve.
