- 1 cup oatmeal

- 2 Tbsp honey or natural sweetener of your choice
- 1/4 cup skim milk or vegetable milk
- 1 egg
- 1 tsp vanilla essence

- We start by putting the oven to preheat to about 180ºC. Prepare the baking tray with the muffin tins. Set aside.In a large bowl, add the oats (slightly crushed if it is flakes), flour, baking powder, baking soda, salt and cinnamon. Mix well.
- In another bowl, put the bananas and mash them with a fork until you get a homogeneous dough. Now add the honey, milk, egg and vanilla essence. Mix well.
- Pour, in the bowl of flours, the mixture from the bowl of liquid ingredients. Mix until you obtain a homogeneous and uniform dough.
- Fill the muffin tins with this batter, up to about ¾ parts of their capacity, and bake for about 15 minutes, or until you see that they are ready. They should be golden brown on the outside and well done inside. To check, prick with a toothpick, if it comes out clean, they are well done.
