Cucumber Gazpacho Recipe
Like any other gazpacho, cucumber gazpacho is also very easy to make. Instructions
- Start by washing the ingredients that you won't peel, such as the tomatoes, onion, bell pepper, and garlic. Cut them into pieces and add them to the blender jar.
- Peel the cucumbers, cut them into pieces, and add them to the blender jar.
- Add water, olive oil, vinegar, salt, and, if desired, mint leaves to the blender jar. Blend until you achieve a smooth texture.
- Once blended, strain the gazpacho to make it even smoother and remove any lumps. Let it rest in the refrigerator for at least a couple of hours, so it is served chilled.
