Ingredients
- 2 avocados Ripe
- 2 cucumbers
- 1 garlic clove
- 1 green onion
- 1/2 green bell pepper
- 250 ml cold water
- 4 Tbsp Extra Virgin Olive Oil
- 2 Tbsp Vinegar
- 1/2 lemon juice
- mint leaves

- Let's start by cutting the avocados in half. Remove the pit and scoop out the flesh. Put it in the blender glass.Wash and peel the cucumbers, also add them to the blender. Do the same with the garlic and the spring onion, previously peeled.
- Also add half a green bell pepper, washed and seeded.Add water, oil, vinegar and lemon juice. Add a pinch of salt, to taste. But be careful not to overdo it, as it is preferable to correct later.
- Mash well until you get a homogeneous texture. At this point, if you want a smooth and creamy gazpacho, you can strain it. Or, if you don't mind some texture, omit the straining step.Let it cool in the refrigerator and serve well chilled.

If you want your gazpacho to be perfect, use ripe avocados. You will notice it greatly in the taste and texture. But how to choose ripe avocados?
To choose good, ripe avocados, look at the color of the skin. Ripe avocados usually have a darker tone, even black. Also the texture will give us an idea of the state of the avocado. If the avocado yields when pressed lightly with the fingers, it is ripe. But be careful with those that sink too much, that is to say, that are too soft, because they will be overcooked.
