Gazpacho is a typical Andalusian recipe, but very popular all over Spain. In my house we make it with water to make it more liquid, and if you have some mint on hand, it will give it a spectacular touch.
And for me, although a glass of gazpacho is a delight and goes on its own, the best way to eat it is with croutons. Chop into small cubes some cucumber, bell pepper, a boiled egg and some fried bread, as we mentioned before. It will be spectacular!

Quick and easy Gazpacho recipe, typical Spanish Gazpacho
To prepare an authentic Spanish gazpacho, all you need to have on hand is a blender or blender. Simply blend all the ingredients with a little bit of water.
The amount of water will depend on the density you want to give to your gazpacho. This is a matter of taste. The same as the quantities, if you prefer it to taste stronger, add a clove of garlic more.
Spanish Gazpacho, quick and easy recipe
- 1 Kg Ripe Pear Tomatoes
- 1 Green Pepper
- 1 Cucumber
- 1 spring onion
- 1 Garlic clove
- 250 ml Water
- 1 Tsp Salt
- 2 Tbsp Vinegar
- 3 Tbsp Extra Virgin Olive Oil
- 4-5 Mint Leaves
- Wash all the ingredients well. Peel the garlic and the spring onion, chop. Peel the cucumber and cut into cubes. Wash well the tomatoes and the bell pepper, remove the seeds from the pepper and cut them into pieces (it is not necessary to peel the tomatoes because once the mixture is crushed we will strain it).
- Put all the ingredients in a blender glass. Add the water, the oil, the vinegar, the salt and, if you want, the mint leaves (try it because it gives a great touch), and blend well until everything is homogeneous and there are no pieces left.
- Once ready, we pass it all through a fine strainer and reserve it in the refrigerator so that it is very cold at the moment of serving.
As you can see the recipe is very simple. In addition, the gazpacho will keep in the fridge for about three days if you keep it hermetically sealed. And, for these hot days it is a very appetizing and very useful recipe.
