As soon as summer arrives, few things are as refreshing as a cold soup. And when we talk about cold soups, we cannot fail to mention gazpacho, which we love so much. A traditional culinary specialty of Spain, but known worldwide. The classic gazpacho, made with tomato, cucumber, bell pepper, onion and olive oil, is a popular choice all over the country. However, today we would like to introduce you to a surprising and fruity variant: apricot gazpacho.


Gazpacho is a traditional dish of Spanish cuisine, specifically from Andalusia. Its original version is mainly made with tomato, bell pepper, cucumber, garlic, bread, olive oil and vinegar, as mentioned above. However, thanks to its great popularity around the world, gazpacho has evolved over time; and countless versions and different recipes have emerged, such as this one we propose today.
The apricot, also known as apricot, is a very juicy and aromatic fruit. And it will bring a sweet and delicate touch to our gazpacho. This unique combination of ingredients creates a fresh and tasty dish that is perfect for hot, sunny days. But, also, loaded with nutrients and vitamins. So there is little more we can ask for.

Apricot Gazpacho Recipe
To prepare our apricot gazpacho we are going to omit the tomatoes, to replace them with apricots, the main ingredient. But you can always combine them. That is to say, if you want to give it also that tomato touch, add one or two tomatoes to the recipe.
The rest of the preparation is the same as for making any gazpacho. Put all the washed, peeled and chopped ingredients in the blender, add the oil and vinegar dressing, the water, a pinch of salt to taste and blend everything together. If you want a smoother texture, strain the result.
Regarding the consistency you want to give it, it will depend on how you are going to serve it. If as a cold soup with croutons, or as a drink. Adjust the amount of water according to your taste. But remember that it is better to be short and correct by adding a little more. This is preferable to leaving too much liquid.

Apricot Gazpacho
Ingredients
- 6 apricots ripe
- 1 Cucumber
- 1 Pepper
- 1 Spring onion
- 1 garlic clove
- 2 Tbsp white wine vinegar
- 3 Tbsp extra virgin olive oil
- Salt
- Mint a few leaves
- 250-300 ml Cold water optional, to adjust consistency
Instructions
- We start by washing and pitting the apricots. We add them, previously chopped, in the blender glass.
- We will also add the cucumber, garlic and spring onion, peeled and chopped. Wash the bell pepper well, remove the seeds and add it cut into pieces.
- Add the water, vinegar, oil and salt, also the mint if you want to add it. Blend well until you get a homogeneous mixture without lumps. For a smoother result, pass the mixture through a strainer.
- Let stand in the refrigerator for at least one hour before serving, so that it is well chilled. Before serving, mix it well again, as it will have settled and the top part will be more liquid.
