Strawberry Gazpacho Recipe
To prepare this version of the classic gazpacho we are going to use, as you can imagine, strawberries as the main ingredient. But we are not going to substitute any ingredient with them. Strawberry Gazpacho Recipe
- 500 g Strawberries
- 400 g Pear Tomatoes
- 1 Red Pepper
- 1 Cucumber
- 1 Red onion
- 250 ml Water
- 1 Tsp Salt
- 2 Tbsp Red Wine Vinegar
- 3 Tbsp Extra Virgin Olive Oil
- 4 Mint leaves For garnish
- Wash all the ingredients well. Peel the onion and cucumber, chop. Wash the strawberries very well and remove the leaves, the same with the tomatoes. Wash and remove the seeds from the bell pepper.
- Put all the ingredients in a blender or food processor. Add the water, oil, vinegar, salt, blend well until everything is homogeneous and there are no pieces left.
- Once ready, we pass it all through a fine strainer and reserve it in the refrigerator so that it is well chilled at the time of serving.Now you have ready a spectacular strawberry gazpacho of the most refreshing and healthy.
How to serve Strawberry Gazpacho
To this gazpacho we can also add some bread from the previous day, previously soaked, if we want a thicker version. This will be very useful if we want to serve it as a first course, or as a dinner, and make this gazpacho a stronger and more complete dish. For it, it will be very well, besides making it a little thicker, to serve it with the classic croutons.
In this case, as croutons, we can choose some diced cucumber, strawberries, tomato, pomegranate, purple onion…

For example, with a touch of lemon (just the juice) we will add a very refreshing touch to the strawberry gazpacho. Also, this citric touch will look great with mint leaves.
