Ingredients
For the Chocolate and Baileys sponge cake
- 2 Cups Flour
- 2 Cups Sugar
- 1/2 Cup Cocoa powder (natural, unsweetened)
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 eggs
- 2/3 Cup Milk
- 1 Cup Oil
- 1/2 Cup Baileys cream
- 1 tablespoon vanilla
- 2/3 Cup boiling water
For the filling cream
- 1 Cup Cream
- 1 Cup Condensed milk
- 1 Cup chocolate shavings
- 1/2 Cup Baileys cream
For the frosting
- 2 Cup Butter
- 1/2 Cup powdered sugar
- 1/2 Cup cocoa powder
- 2 Tbsp Baileys
- 1/2 Tbsp vanilla extract
Instructions
We will begin by making the sponge cake.
- Preheat the oven to 300ºF.In a large bowl, sift the flour, sugar, cocoa powder, baking soda and salt. Mix them well.2 Cups Flour, 2 Cups Sugar, 1/2 Cup Cocoa powder, 1 teaspoon baking soda, 1/2 teaspoon salt
- Once mixed, we will add the eggs, milk, oil, Baileys and vanilla, and mix it very well with a whisk, until we get a uniform dough.2 eggs, 2/3 Cup Milk, 1 Cup Oil, 1/2 Cup Baileys cream, 1 tablespoon vanilla
- When our sponge cake batter is homogeneous, add the boiling water, very slowly, and stir.Pour the dough into the baking pan, and let it bake at 300ºF for about 40-45 minutes (check that it is done with a toothpick. If you prick it and it comes out dry, you can remove it).A few minutes before our sponge cake is done, we are going to prepare the cream with which we will "fill" it.2/3 Cup boiling water
For the filling cream
- As soon as you take the cake out of the oven, pierce the cake with the round handle of a wooden spoon, or with a straw.In a bowl, pour the chocolate shavings, stir.In another bowl, put the condensed milk, cream and Baileys cream, mix well. Put it in the microwave for one minute and as soon as you take it out, still hot, pour it over the chocolate shavings, stir it well and pour it over the sponge cake with the holes in it.1 Cup Cream, 1 Cup Condensed milk, 1 Cup chocolate shavings, 1/2 Cup Baileys cream
- Let it cool to room temperature. When it is no longer hot, store it in the refrigerator until it has cooled completely.
For the frosting
- When the cake is cold, we can prepare our frosting. Start by adding the butter at room temperature, powdered sugar, cocoa, Baileys and vanilla in a bowl. Beat well until the cream is whipped, that is, when you take out the whisk, it forms peaks.2 Cup Butter, 1/2 Cup powdered sugar, 1/2 Cup cocoa powder, 2 Tbsp Baileys, 1/2 Tbsp vanilla extract
