For the dough
- 1 Cup Butter (at room temperature)
- 1/2 Cup powdered sugar
- 2 tsp grated lime peel
- 1 & 3/4 Cups Flour
- 1/2 tsp Salt
For the Stuffing:
- 4 Eggs
- 1 & 1/3 Cups Sugar
- 1/4 Cup Flour
- 1/2 tsp Baking powder
- 1/3 Cup Lemon juice
- 1 & 1/2 tsp Lemon peel zest
For decoration
- Powdered sugar To sprinkle on top before presenting the dessert.
- Lime and lemon slices Cut some slices of the citrus fruits to place on top of the dessert once finished.
Instructions
For the base of our bars:
- Let's start by buttering the mold so that the dough does not stick to our lemon bars, and, if you have baking paper, place it on top (although with the butter, it will not stick and it will be enough, but if you want to unmold more easily, use baking paper).1 Cup Butter
- Once we have prepared the mold, you can start preheating the oven to 350ºF.
- Let's continue with the base of our lemon bars:Start by mixing the dry ingredients of the dough in a bowl: the flour, salt and sugar, and the lime zest. When these ingredients are well mixed, we continue by adding the butter, at room temperature. Mix well until it looks homogeneous.1/2 Cup powdered sugar, 1 & 3/4 Cups Flour, 1/2 tsp Salt, 2 tsp grated lime peel
- Put the mixture in the mold we had prepared: it has to cover the whole base well. You can help yourself by pressing and expanding the dough with the back of a spoon to make it uniform.
- Once our base covers the entire tray evenly, we are going to put it in the oven for about 15-18 minutes at 350ºF. Keep an eye on it in case it starts to brown before (it will depend on the power of your oven), in that case, take it out when you see it is done.
Let's move on to the stuffing:
- To start with the filling of our lemon-lime bars, first beat the eggs well in a bowl, and add the sugar. Mix well. Add the lemon juice and zest and continue mixing.4 Eggs, 1 & 1/3 Cups Sugar, 1/3 Cup Lemon juice, 1 & 1/2 tsp Lemon peel zest
- Now we are going to continue adding the flour and the yeast. Add the sifted flour and yeast to the eggs to avoid lumps. Continue mixing for about 3-5 minutes until you see a homogeneous dough.1/4 Cup Flour, 1/2 tsp Baking powder
- On top of the baked base of our bars, add the previous mixture (the filling), and bake again for about 15-20 minutes at 350ºF.
- Once finished, leave it out for a few minutes until our dessert cools.I recommend that you do it a few hours before eating them, and once they have cooled, keep them in the refrigerator so that when it is time to eat them, they are very fresh.
For decoration
