Ramen is a typical Japanese dish. It consists of a soup made with meat or vegetable broth, to which noodles and other ingredients are added. Lately it is a dish that is becoming very popular outside Japan. There are even restaurants specializing in this dish. It is a very complete dish with a spectacular taste. And, although there are almost as many Ramen recipes as there are villages in Japan, today we bring you a recipe with simple ingredients, so you can prepare it at home.

Ingredients

For the Broth

  • 1 Chicken Carcass
  • 300 g Pancetta
  • 1 Onion
  • 2 Leeks
  • 2 Carrots
  • 3 Garlic cloves
  • Fresh Ginger
  • 4 Shiitake mushrooms (fresh)

For the Marinated Eggs

  • 4 Eggs
  • 1 Clove of Garlic
  • Fresh Ginger
  • 200 ml Soy Sauce
  • 60 ml Mirin
  • 25 g Brown sugar

For Ramen

  • 300 g Ramen noodles
  • Chives
  • Nori seaweed
  • Spinach Sprouts
  • Extra Virgin Olive Oil

Instructions

For the Broth

  • We start by putting a drizzle of oil in a frying pan. Once it is hot, put the bacon (whole, not chopped), and seal it on both sides until it is golden brown.
  • In a pot, put the peeled and washed vegetables from the broth (onion, leeks, carrots and garlic).
Clean the mushrooms very well and add them to the pot. Add two or three slices of ginger.
  • Put the chicken carcass and the bacon and cover with water. Bring to the boil and cook for 2 and a half hours (if you are using a fast cooker, half an hour will be enough).

For the Marinated Eggs

  • The first thing to do is to cook them. Put a saucepan with water and the eggs. Let them cook for 6 minutes from the moment the water starts to boil.
  • After this time, run the eggs under cold water to stop cooking. Peel them being careful not to burn yourself.
  • Put the rest of the marinade ingredients well mixed in a small pot (the crushed garlic and grated ginger), on the fire.
  • When it starts to boil, remove from the heat and add the boiled eggs and bacon.
Let stand for two hours, turning the ingredients from time to time so that they are well impregnated with the marinade.

To finish our Ramen

  • Strain the broth we have prepared, and cook the noodles in it for the time indicated on the package. And we begin to assemble the Ramen.
In an individual bowl (we are going to serve the ramen already, so distribute the ingredients), put a couple of spoonfuls of the marinade where we have the eggs and the bacon. We also put a few noodles.
  • Cut the marinated bacon into strips. Add them to the bowl.
  • Also add, in each bowl, an egg cut in half, some chopped chives, chopped mushrooms, nori seaweed and spinach sprouts.
Now you can serve this delicious ramen.

Tried this recipe?Let us know how it was!

Although Ramen has become a very popular Japanese dish, the truth is that its origin is in China. In the 17th century, this dish was brought to Japan by Zhu, an exiled Chinese politician and writer. According to legend, Zhu was welcomed by a Japanese feudal king, who, in gratitude, prepared him a noodle dish with broth.

Whether this legend is true or not, China and Japan have had a constant cultural exchange for centuries.

Naruto, the most striking ingredient of Ramen

As we said, there are as many Ramen recipes in Japan as there are villages. And with its growing internationalization, the number of recipes has multiplied to adapt it to the ingredients of each country.
But of all the ingredients that can be added to Ramen, without a doubt one of the most striking and typical is Naruto.

Its name comes from the sea whirlwinds (very frequent) that occur in the coastal town of Naruto (southern Japan). And it is nothing more than pressed fish paste (surimi type) with food coloring.

And with this we finish our ramen recipe with very simple and easy ingredients, so you can all try it at home. If you like Asian cuisine here is a very tasty Asian recipe: Teriyaki Chicken with Rice Recipe
