Ingredients
  

For the Broth

  • 1 Chicken Carcass
  • 300 g Pancetta
  • 1 Onion
  • 2 Leeks
  • 2 Carrots
  • 3 Garlic cloves
  • Fresh Ginger
  • 4 Shiitake mushrooms (fresh)

For the Marinated Eggs

  • 4 Eggs
  • 1 Clove of Garlic
  • Fresh Ginger
  • 200 ml Soy Sauce
  • 60 ml Mirin
  • 25 g Brown sugar

For Ramen

  • 300 g Ramen noodles
  • Chives
  • Nori seaweed
  • Spinach Sprouts
  • Extra Virgin Olive Oil

Instructions
 

For the Broth

  • We start by putting a drizzle of oil in a frying pan. Once it is hot, put the bacon (whole, not chopped), and seal it on both sides until it is golden brown.
  • In a pot, put the peeled and washed vegetables from the broth (onion, leeks, carrots and garlic).
    Clean the mushrooms very well and add them to the pot. Add two or three slices of ginger.
  • Put the chicken carcass and the bacon and cover with water. Bring to the boil and cook for 2 and a half hours (if you are using a fast cooker, half an hour will be enough).

For the Marinated Eggs

  • The first thing to do is to cook them. Put a saucepan with water and the eggs. Let them cook for 6 minutes from the moment the water starts to boil.
  • After this time, run the eggs under cold water to stop cooking. Peel them being careful not to burn yourself.
  • Put the rest of the marinade ingredients well mixed in a small pot (the crushed garlic and grated ginger), on the fire.
  • When it starts to boil, remove from the heat and add the boiled eggs and bacon.
    Let stand for two hours, turning the ingredients from time to time so that they are well impregnated with the marinade.

To finish our Ramen

  • Strain the broth we have prepared, and cook the noodles in it for the time indicated on the package. And we begin to assemble the Ramen.
    In an individual bowl (we are going to serve the ramen already, so distribute the ingredients), put a couple of spoonfuls of the marinade where we have the eggs and the bacon. We also put a few noodles.
  • Cut the marinated bacon into strips. Add them to the bowl.
  • Also add, in each bowl, an egg cut in half, some chopped chives, chopped mushrooms, nori seaweed and spinach sprouts.
    Now you can serve this delicious ramen.
