The mushrooms and Brie cheese cream soup is a very rich cream with a spectacular texture. Even if you are not very fond of creams or purees, I advise you to try this cream of mushroom soup. I am sure you will love it.
Mushrooms are one of our favorite ingredients. In addition, their season is approaching in autumn. And, although we can find them at any time in supermarkets, autumn is the best time to enjoy them. They are at their optimum moment.

If you want to make an even lighter cream, omit the Brie cheese, or replace it with a ligh cheese, with a mild flavor, to give more creaminess to the cream.
Another option is to add a little milk when we are going to blend all the ingredients.
The rest of the recipe is very simple. To give more body to the cream we will also use leeks and potatoes. And you will see how we get a delicious, healthy dinner with fresh ingredients.
Mushroom and Brie Cheese Cream Soup
Ingredients
- 500 g Mushrooms
- 250 g Potatoes
- 100 g Brie cheese
- 1 Leek
- 2 Garlic
- 1 l Vegetable stock
- Thyme
- Pepper
- Salt
- Extra Virgin Olive Oil
Instructions
- We will begin by cleaning the mushrooms well, to remove all the soil that they may bring. Cut the mushroom stems and slice them.
- Peel the leek and cut it into pieces. Do the same with the potatoes and garlic.
- In a saucepan, with a drizzle of olive oil, sauté the vegetables over medium heat. When they begin to color, add the mushrooms and garlic and let them brown.
- Add salt to taste, a little pepper and thyme. Add the vegetable broth and let it cook for about 20 minutes, until you see that the vegetables are soft.
- Pass it through the blender, incorporating the chopped cheese, until it becomes a smooth cream.Your cream of mushroom soup is ready.
