The creams and purees are a very healthy option for dinner, or as a starter at lunch. They are also so versatile. We can add a multitude of ingredients and combine them as we like. Even fruits give a spectacular touch to vegetable creams; as you will see in this recipe of leek cream with apple. A healthy and light dish with an unbeatable pleasant taste.

Leek and Apple Cream Soup Recipe

If you like vichyssoise, or leek cream, you will love this version in which we add apple to our cream.

Also, thanks to the apple, which gives it a smoother and creamier texture, there is no need to add cheese or cream. This makes it even healthier.
It is also a perfect cream for a first course at lunch. And, like the traditional leek cream, you can eat it warm, for cold days; or cold for summer. It is perfect either way.

Ingredients
  

  • 3 Leeks
  • 2 Apples
  • 2 Potatoes
  • Extra Virgin Olive Oil
  • Salt
  • Pepper

Instructions
 

  • We start our recipe by preparing the ingredients. We wash and cut the leeks. We also prepare the apple and the potatoes, which we peel and cut into cubes.
  • Now, in a pot with a drizzle of oil, we are going to put the leeks over medium heat for about 5 minutes.
    Extra Virgin Olive Oil, 3 Leeks
  • After this time, add the apples and potatoes. Cover with water, season with salt and pepper to taste, and cook for about 20 minutes.
    2 Apples, 2 Potatoes, Salt, Pepper
  • We continue putting the ingredients in the blender. Add a little of the cooking broth, but not all of it. When you have blended the cream, add more broth if necessary, to taste. If you like it smoother, more liquid, add a little more.
    Once ready, serve with a little ground pepper and a drizzle of oil.
