Ingredients
  

  • 500 g Mushrooms
  • 250 g Potatoes
  • 100 g Brie cheese
  • 1 Leek
  • 2 Garlic
  • 1 l Vegetable stock
  • Thyme
  • Pepper
  • Salt
  • Extra Virgin Olive Oil

Instructions
 

  • We will begin by cleaning the mushrooms well, to remove all the soil that they may bring. Cut the mushroom stems and slice them.
  • Peel the leek and cut it into pieces. Do the same with the potatoes and garlic.
  • In a saucepan, with a drizzle of olive oil, sauté the vegetables over medium heat. When they begin to color, add the mushrooms and garlic and let them brown.
  • Add salt to taste, a little pepper and thyme. Add the vegetable broth and let it cook for about 20 minutes, until you see that the vegetables are soft.
  • Pass it through the blender, incorporating the chopped cheese, until it becomes a smooth cream.
    Your cream of mushroom soup is ready.

Notes

NOTE: You can reserve a few slices of mushrooms and grill them to decorate your cream when serving. You can also serve it with toasted or fried bread croutons, delicious!
