And that is exactly what happens with this tomato, carrot and ginger cream soup recipe, which is an ideal dish at any time of the year.

You will see that preparing this cream is very simple. You can accompany it with some croutons of fried bread, which look so good with creams; giving them the crunchy touch they lack; decorate it with some seeds of your choice; or serve it with a teaspoon of blueberry jam in the middle of the dish. You will give it a spectacular and very sophisticated touch with a simple gesture.

Ingredients
  

  • 1 Kg Tomatoes
  • 6 Carrots
  • Ground ginger
  • Peppermint (a few leaves)
  • Salt
  • Pepper
  • Extra virgin olive oil

Instructions
 

  • Wash the tomatoes and cut them into quarters.
    1 Kg Tomatoes
  • In a pot, put a little olive oil. Cook the tomatoes for a few minutes.
    While the tomatoes are cooking, peel and cut the carrots. Add the carrots to the pot with the tomatoes.
    1 Kg Tomatoes, Extra virgin olive oil, 6 Carrots
  • Cook everything together for about 35 minutes, over low heat. We will be moving from time to time.
    After this time, add the ginger and season to taste.
    Ground ginger, Pepper, Salt
  • When the vegetables are tender, put them in a blender glass and blend well. Until a homogeneous cream is obtained. We serve decorating with some mint leaves.

For this tomato cream, unlike other cream soups, we are not going to cook the ingredients. The broth from the tomatoes will be enough. Thus, it will have a more concentrated flavor. You will see how simmering the tomatoes will release enough broth.
