- 1 Kg Tomatoes
- 6 Carrots
- Ground ginger
- Peppermint (a few leaves)
- Salt
- Pepper
- Extra virgin olive oil
Wash the tomatoes and cut them into quarters.
1 Kg Tomatoes
In a pot, put a little olive oil. Cook the tomatoes for a few minutes. While the tomatoes are cooking, peel and cut the carrots. Add the carrots to the pot with the tomatoes. 1 Kg Tomatoes, Extra virgin olive oil, 6 Carrots
Cook everything together for about 35 minutes, over low heat. We will be moving from time to time.After this time, add the ginger and season to taste. Ground ginger, Pepper, Salt
When the vegetables are tender, put them in a blender glass and blend well. Until a homogeneous cream is obtained. We serve decorating with some mint leaves.
