Ingredients
For the crepes
- 1/2 Cup flour
- 2 eggs
- 1 tbsp butter
- 2 Cup milk
- 1 pinch Salt
For the filling
- 5 Oz smoked salmon
- 1 Cup cream cheese
- 1 plain unsweetened yogurt
- Herbs to taste
- chopped chives
- Salt
- Ground pepper
Instructions
For the pancakes
- In a bowl put the eggs and the milk. Add a pinch of salt and beat. Add the sifted flour and mix well (below you will find some tips for perfect pancakes). When you have a homogeneous batter, add the melted butter. If you have a mixer, it won't take long.Let the dough rest, covered, about 30 minutes.2 eggs, 1 tbsp butter, 2 Cup milk, 1 pinch Salt, 1/2 Cup flour
For the filling
- While it rests, we are going to prepare the cream cheese. Add your favorite herbs and finely chopped chives to the cheese. Add the natural yogurt and mix well.1 Cup cream cheese, 1 plain unsweetened yogurt, Herbs to taste, chopped chives, Salt, Ground pepper
- Now, in a non-stick frying pan, pour a little butter. When it is melted, spread it all over the pan. Add a little of the pancake batter, helping you with a ladle so that they all come out the same size, and meanwhile, move the pan little by little so that the batter is well distributed, and the pancakes are thin.
- Let them cook until bubbles start to appear on the surface. Then, turn them over and let them cook on the other side.Once the crepe is done, we are going to fill it. You can make the next one in the meantime.
- Put a spoonful of the cream cheese flavored with the herbs in the center of the crepe and spread it a little. Cover it with the smoked salmon. Fold the crepe as you prefer, you can roll it, fold it in four parts forming a triangle, or simply in half. Tips for perfect crepes
- Sift the flour to make it easier to mix the batter.
- The eggs are beaten with the milk and salt. Add the flour little by little, without stopping beating. Once the dough is smooth, add the melted butter (but not too hot). If you have a mixer, it is much easier: mix all the ingredients and beat well.
- It is very important that the pan is non-stick and in optimal conditions, because if it sticks it will be impossible to make them.
- When adding the batter, remove the pan from the heat, so that before it is done, you can spread it all over the pan.
- In the recipe we recommend a half hour rest for the dough. That is enough, but if you have time, you can let it rest for up to 2 hours in the refrigerator (covered with plastic wrap).
- When turning it over, do it carefully so as not to break it. Separate the edges of the pan with the help of a spatula until you can turn it over completely.
