We are simply going to cook the leeks so that they are very tender, before baking them. Once cooked, we pass to the oven. We will bake the leeks with heat up until they begin to brown, or until they are golden to your liking. As you prefer.
And, once baked, we will simply accompany them with the vinaigrette that we are going to elaborate. For this vinaigrette, we are going to mix very well a finely chopped tomato, a spring onion, vinegar, mustard and oil. It is as simple as that. Although later we will see some options if you want to vary this recipe.
Before starting, remember to buy leeks that are not too big. It is better if they are of medium size or even small. They will be more tender and will need less time both cooking and baking. And remember, when we discard the green part of the leeks, because we are not going to use it in this recipe, do not throw it away. In the kitchen everything must be used.
Roasted Leeks with Mustard Vinaigrette
Ingredients
- 4 Leeks
- 1 Tomato (ripe)
- 1 Chives
- 1 Tsp Mustard
- Vinegar
- Extra virgin olive oil
- Crushed pepper
- Salt

- This recipe is sure to surprise you, not only for its simplicity, but also for the delicious result. To prepare these original leeks, first we will begin by removing the root zone and the green part. We wash them very well under the tap.
- Put plenty of water in a pot, and when it starts to boil, cook the leeks for about 10 minutes.
- Meanwhile, we can prepare the vinaigrette with which we are going to accompany our leeks. In a bowl, add the finely chopped tomato and spring onion. Season with a good splash of oil, vinegar to taste, and mustard. Mix very well until well blended. Set aside.
- When the leeks are cooked, drain them well from the water and place them on a baking tray on parchment paper. Paint them with a little oil and add salt and pepper to taste.With the oven previously preheated to 180ºC, bake for about 15 minutes, with heat only on top, until they begin to brown.
- Once the leeks are roasted to your liking, take them out of the oven and serve them with the mustard and tomato dressing on top – delicious!
