Hummus is perfect for a very healthy snack or as a starter to share. And, in particular, this pumpkin hummus, like the classic chickpea hummus, can be eaten in a thousand ways. Serve it with toasts or bread sticks to dip in the hummus, or prepare your own delicious homemade breadsticks.
Pumpkin Hummus Recipe
Unlike other hummus, where we substitute the chickpeas for another ingredient, on this occasion, we will not do it this way. Along with the pumpkin, which we will use roasted, we will also add cooked chickpeas.
We are going to incorporate to our hummus Tahini, a paste of sesame seeds and oil, the same that takes the original hummus. Although you can buy it in many supermarkets, it is always better if you make it homemade. It is very simple and will take you practically no time at all.
And finally, the pumpkin, to make it tender, we will have to roast it. It is best to do it in the oven. But as we do not need too much quantity, the ideal is that you take advantage of the oven to make other elaborations. For example, you can put a couple of heads of garlic and also prepare a delicious garlic pate.
Pumpkin Hummus Recipe
Ingredients
- 400 g Pumpkin
- 400 g Cooked chickpeas
- 2 Cloves of garlic
- 80 g Tahini
- 1/2 tsp cumin
- 1 tsp Paprika
- Extra virgin olive oil
- Salt
- Pepper
Instructions
- Let's start by putting the pumpkin and the two cloves of garlic in the oven. To do this, we cover the tray with baking paper, or we put the ingredients in a container suitable for the oven. Add a good drizzle of oil and a pinch of salt.Bake for 30 minutes at 180ºC. Keep an eye on them from time to time so that the garlic does not burn. Or, cover them with aluminum foil.
- When the pumpkin is tender, we put it in a blender together with the garlic (we can also do it with the blender). Incorporate the rest of the ingredients and another drizzle of oil.
- Start mashing and, if it is too thick, add a little water, adding water until it acquires the desired texture. And now you have a spectacular pumpkin hummus ready.
