Mayonnaise is one of the easiest sauces to make at home. Many times we don’t try it for fear of having to throw away all the ingredients; but the truth is that if we make it carefully, we won’t have any problem. And besides, it has nothing to do with the one we can buy in the supermarket, since homemade mayonnaise is much healthier, so do not miss the recipe.
You only need a blender, and you can give it the intensity that you prefer or make it lighter if you don’t like strong sauces.
I usually prepare it with sunflower oil, as it is smoother. But if you like it, you can prepare it with olive oil. It will have a stronger flavor.

Ingredients
- 1 Egg
- 2 Cups Sunflower oil
- 1 lemon
- 1/2 tsp Salt
Instructions
- In the bowl of a blender, place the egg, salt, 1 cup of oil and add the juice of half a lemon.1 Egg, 2 Cups Sunflower oil, 1/2 tsp Salt, 1 lemon
- Put the mixer right at the bottom of the glass and, without moving it, start beating at low speed. Do not move the mixer until you see the mayonnaise begin to thicken and rise to the top. Start adding the second cup of oil slowly, while continuing to whisk.2 Cups Sunflower oil
- Gently move the mixer, so that one side of the mixer rises slightly. But very slowly, continue with these movements until all the ingredients are integrated.
- Your delicious homemade mayonnaise is ready.

As you can see, it is super simple to make. You just have to be patient and do not move the mixer while the ingredients are being integrated. And finish with very gentle movements of the mixer, never move it abruptly until all the oil is integrated into the mayonnaise.

How to fix a cut mayonnaise
You have several options for recovering your mayonnaise if it has been cut off.
- Adding an egg. In another glass, add one egg and gradually add the chopped mayonnaise. Start whisking until the egg emulsifies. Then add the rest of the chopped mayonnaise while whisking.
- Adding two tablespoons of milk. Heat the milk and put two tablespoons in another mixing glass. Start whisking, adding little by little the mayonnaise that we had cut, and, ready! Your mayonnaise has resurfaced.
- Or adding water. It is done in the same way as with the milk, only replacing it with water.
This way you will avoid throwing away all the ingredients used in your homemade mayonnaise and you will be able to recover it easily and quickly.
