Fat-free turkey stew recipe, a delicious light stew.

Although many of us associate stews and stew dishes with hearty and very caloric recipes, we can also find very light stews. Perfect for all those who are looking to take care of their figure. And that is precisely what we bring you today. A simple and easy recipe to prepare a very light turkey stew, with practically no fat.

These dishes are perfect for cold days. Because, although this is a hearty stew, it is also very light. Since turkey meat is one of the healthiest and low in fat. But, not for that reason less tasty, because with stews like this one it will become your favorite.

Light Turkey Stew Recipe, fat free

As with any other stew or stew we can use as many vegetables as we want. All of them will be good. For this reason, later on we are going to propose you more options in case you want to vary the recipe to your taste.

The first thing we will do is to seal the turkey meat, which we have previously seasoned with salt, pepper and flour.

In that same pot, where we have cooked the meat, and, without cleaning it, it will be where we will make the sofrito. Which is the same as any other. We chop the vegetables very well, in small pieces as small as possible, and we sauté them with a drizzle of oil.

First the onion and the leek, then the carrots, the green beans and the potatoes. In this order. Although, when the onion and leek begin to become transparent we can add the rest of the vegetables if we have them prepared and cleaned.

We are going to add the grated tomato, but you can substitute it with tomato sauce, as you prefer. And, once the sofrito is ready, we will only have to cook it. You can do it with water or with chicken broth to add more flavor.

Ingredients
  

  • 500 g Turkey
  • 1 Onion
  • 1 Leek
  • 3 Carrots
  • 3 Tomatoes
  • 200 g Green beans
  • 4 Potatoes
  • 1 Glass of white wine
  • 1-2 Tbsp Flour
  • Extra virgin olive oil
  • Salt
  • Pepper

Instructions
 

  • First we prepare the turkey. We are going to cut it into small bite size pieces. Season with salt, pepper and flour.
  • In the pot where we are going to cook the stew, put a drizzle of oil, covering the bottom. When it is hot, add the turkey and cook until golden brown. Set aside.
  • Add a little more oil (in the same pot, without cleaning it), and fry the finely chopped onion. Over medium-low heat.
  • Meanwhile, chop the leek and add it to the onion. Let it cook until both start to become transparent.
  • We continue peeling the carrots, cut them into small slices. Add them to the pot.
    The same with the green beans, which we will have previously washed and removed the side strands. We also add the potatoes.
  • Grate the tomatoes and, when the vegetables are tender, add the turkey and the tomato. Let the tomato reduce and add the wine. As we did with the grated tomato, let it reduce.
  • Once we have our stir-fry ready with the turkey, all that remains is to cook it. To do this, cover with water and bring to a boil.
  • As soon as it starts to boil, lower the heat to medium and cook for 20 to 30 minutes, until the meat is tender.
    Correct the salt and we have ready a wonderful turkey stew, light and with very little fat.

Do you need ideas to vary the recipe?

As we have already mentioned, this type of stews and casseroles are very versatile. And, we can elaborate them with all the options we can think of. So we are going to give you some ideas in case you want to give the recipe a twist:

Regarding the vegetables in the stir-fry, in addition to those listed above you can add bell bell pepper, zucchini, squash, mushrooms or any other mushroom of your liking… Green leafy vegetables such as spinach and chard will also look great.

If you want your light turkey stew to have more color, you can add a pinch of turmeric, saffron or paprika. In addition, you will also add a different and very good touch of flavor.

And, if you want to prepare a very different dish, you can always change the type of meat. For example, replace the turkey with beef or pork.
