- 1 Kg Ripe Pear Tomatoes
- 1 Green Pepper
- 1 Cucumber
- 1 spring onion
- 1 Garlic clove
- 250 ml Water
- 1 Tsp Salt
- 2 Tbsp Vinegar
- 3 Tbsp Extra Virgin Olive Oil
- 4-5 Mint Leaves
Wash all the ingredients well. Peel the garlic and the spring onion, chop. Peel the cucumber and cut into cubes. Wash well the tomatoes and the bell pepper, remove the seeds from the pepper and cut them into pieces (it is not necessary to peel the tomatoes because once the mixture is crushed we will strain it).
Put all the ingredients in a blender glass. Add the water, the oil, the vinegar, the salt and, if you want, the mint leaves (try it because it gives a great touch), and blend well until everything is homogeneous and there are no pieces left.
Once ready, we pass it all through a fine strainer and reserve it in the refrigerator so that it is very cold at the moment of serving.
