Duchess potatoes recipe

- 500 g Potatoes
- 50 g Butter
- 1 egg yolk
- 2-3 l Water
- Salt
- Black pepper
- Grated cheese (optional)
The first thing we are going to do is to peel and wash the potatoes. Cut them into medium-sized cubes to make cooking easier, and put them in a saucepan with water and a little salt. Let them cook for about 15-20 minutes, until they are soft enough to mash.Once ready, you can pass them through a potato masher or mash them with a fork. Add the butter while the puree is still hot, so that it melts and you can mix it homogeneously. Add more salt if needed and a little pepper, to taste.If you want to add some grated cheese, this is the moment. Mix well so that it is distributed throughout the puree. Preheat the oven to 200ºC while we shape the potatoes.Once ready, put the mashed potatoes in a piping bag with a wide nozzle. On the baking tray, covered with parchment paper, place the "potato cakes". Do not make them too big, about 3 to 4 cm.Once the potatoes are ready, paint them with the beaten egg yolk, using a kitchen brush. Put the potatoes in the oven and put the grill on to give them that characteristic golden color. 10 minutes will be enough.Your duchess potatoes are ready.
