- The first thing we are going to do is to peel and wash the potatoes. Cut them into medium-sized cubes to make cooking easier, and put them in a saucepan with water and a little salt. Let them cook for about 15-20 minutes, until they are soft enough to mash.Once ready, you can pass them through a potato masher or mash them with a fork.
- Add the butter while the puree is still hot, so that it melts and you can mix it homogeneously. Add more salt if needed and a little pepper, to taste.If you want to add some grated cheese, this is the moment. Mix well so that it is distributed throughout the puree.
- Preheat the oven to 200ºC while we shape the potatoes.Once ready, put the mashed potatoes in a piping bag with a wide nozzle. On the baking tray, covered with parchment paper, place the "potato cakes". Do not make them too big, about 3 to 4 cm.Once the potatoes are ready, paint them with the beaten egg yolk, using a kitchen brush.
