How to make Perfect French Fries

Surely everyone is crazy about a good plate of french fries. That food so simple but that has so many followers. A simple french fries, without anything else, are the favorite food of many people. In addition, they are the perfect accompaniment for a multitude of dishes, and, although they are very easy to make in the kitchen, there are many tricks to make them perfect. Although frying potatoes is a very simple task, we can always follow a few simple tricks to make them perfect.

Later we will see in detail all the steps to follow. But, as a summary, you will see that the trick is to fry the potatoes twice.
A first one, in which the fire will not be too strong. This way we will get them to be tender on the inside.
Once fried, we will finish with a second frying, this time stronger, to finish giving them the crispy touch and that golden tone on the outside, so characteristic of the Perfect French fries.

Ingredients
  

  • 4 Potatoes (for frying)
  • 1 l Olive oil
  • Salt

Instructions
 

  • Start by peeling the potatoes. If you want to fry them with the skin on, wash them very well under the tap. Cut them into small sticks, trying to keep them similar.
    Once cut, leave them in water for 15 minutes. After this time, drain them and add a little salt.
  • Heat the oil in a frying pan over medium heat. When it is hot, add the potatoes, fry for about 15 minutes and take them out. Let them drain on absorbent paper.
    Let stand for 10 minutes.
  • After that time, put the oil on the fire, this time at maximum heat and, when it is hot, fry again for about 5-10 minutes, until golden brown to your liking.
    Drain on absorbent paper to remove excess oil, and that's it!

Tips for perfect French fries

1 Uses quality raw materials

The first thing to take into account is the quality of the potato, since it is the key ingredient (there is not much more). The most recommended for frying are Monalisa and Kennebec. If you do not find either of these two varieties, make sure that they are at least specific for frying.
Regarding the oil, it is a matter of taste. Many people prefer to fry with sunflower oil. I personally always use Extra Virgin Olive Oil, even for frying.

2 Potatoes, peeled or unpeeled?

Spain is one of the few countries where potatoes are peeled for frying. That is up to each person’s taste. You can peel them or you can wash them very well under the tap with a food scouring pad. It is true that when you peel the potatoes, you are removing a multitude of nutrients found in the skin.

Cut them into more or less equal sticks, about a centimeter wide, neither too thin nor too thick.

3 Soak in water, don’t forget!

To get loose and very crispy fries, once you have them cut, let them rest for about 15 minutes in a bowl of water. This way, the potato will release part of the starch and will not stick to each other while frying.

4 Salt, before or after to get perfect french fries?

It is advisable to add salt before frying. Once you have removed them from the water, drain them well and add a handful of salt (to taste). Mix well so that it reaches all the potatoes. They are now ready to fry.
Once fried, taste them. If you need to correct the salt, add a little more sprinkling over the fried potatoes.

5 And to get the perfect frying…

To get potatoes of ten we will fry in two times. First we will put the frying pan over medium heat. Once the oil is hot add the potatoes. Let them fry for about 10 minutes.
After that time, take them out of the oil and put them to drain. Let them rest for about ten minutes.
Once they have rested from the first frying, put the frying pan on the heat again, this time at maximum heat and, when it is very hot, add the potatoes again. Fry for about 5 minutes over high heat, until golden brown on the outside.

Once ready, take them out again and let them drain the excess oil on absorbent paper.

Now you have perfect crispy and crunchy fries, but very tender and juicy on the inside.
