Ingredients
  

  • 250 g short pasta
  • Extra Virgin Olive Oil
  • 1 Bay leaf
  • 1 pineapple
  • 1 spring onion
  • 200 g York ham
  • 100 g mozzarella cheese
  • 1 bunch fresh cilantro
  • 1 can corn
  • 1 lemon
  • Salt
  • pepper

Instructions
 

  • Let's start with the pasta. In a pot, add a drizzle of oil and, when it's hot, add the washed bay leaf. Sauté for a couple of minutes over medium heat, then add water. When it starts boiling, add a pinch of salt and the pasta. Cook according to the type of pasta and the instructions on the package, until al dente.
  • Meanwhile, we can prepare the rest of the ingredients. Peel and cut the pineapple into small pieces. Do the same with the bell pepper and spring onion. Finely chop the York ham and mozzarella cheese. Add all these ingredients to a large bowl.
  • When the pasta is ready, drain it and let it cool. Then, add it to the bowl as well. Mix well with the other ingredients.
  • Next, dress the salad: drizzle it with a splash of lemon juice and season with salt and pepper to taste. Finish with some finely chopped fresh cilantro. Once finished, refrigerate the salad for at least half an hour. This way, it will be nicely chilled when served, and all the flavors will have melded together.
