We are going to clean the chard and, chopped, cook them in a pot with plenty of water. Bring to the boil and boil for a few minutes until tender.Drain the water well, set aside.
Beat the eggs well in a bowl and add a pinch of salt (and pepper, if you like). Add the chard and mix well.
In a frying pan, put a drizzle of oil, when it is hot, add the eggs with the chard. Put over medium heat and cook, over medium heat, until it is curdled.
When it starts to be ready, you can fold it in half, to give it the characteristic shape of the omelette. And now you have a great French omelette with chard.
