First we will make the orange guacamole. Start by cutting the avocado in half, remove the pit, and spoon out all the flesh. Chop it into small cubes. Once cut, add it to a bowl. Set aside.

Peel the orange very well, trying not to leave any piece of white skin, if necessary, remove it with a knife, and also cut it into very small cubes. Add to the bowl with the avocado.

Cut the spring onion, chop very finely and add. The same with the tomato, chop into small cubes and add to the bowl. Add the finely chopped chives.

Once we have all the chopped ingredients in the bowl, we take the lemon and squeeze its juice over it (this will also prevent the avocado from oxidizing, which makes it look pretty bad). Add a splash of vinegar, a splash of oil, and salt and pepper to taste. Mix well. Reserve in the refrigerator (we want it to be very cold).
