Baked Salmon with Orange Guacamole Recipe

Ingredients
  

For the salmon

  • 2-3 loins of salmon (depending on size)
  • 1 onion
  • 1-2 lemons
  • 3 garlic cloves
  • Dill
  • Salt and Pepper
  • Aluminum foil or silver foil

For the orange guacamole

  • 1 avocado (very ripe)
  • 2 small oranges
  • 1 spring onion
  • 1 tomato
  • 1 lemon
  • chives
  • salt and pepper
  • 2 tsp vinegar
  • 1 tsp Extra virgin olive oil

For the rice (side dish)

  • 2 handfuls Rice (small, it is only for accompaniment)
  • 2 bay leaves
  • 2 garlic cloves
  • Oil
  • Salt

Instructions
 

For the Orange Guacamole

  • First we will make the orange guacamole. Start by cutting the avocado in half, remove the pit, and spoon out all the flesh. Chop it into small cubes. Once cut, add it to a bowl. Set aside.

  • Peel the orange very well, trying not to leave any piece of white skin, if necessary, remove it with a knife, and also cut it into very small cubes. Add to the bowl with the avocado.

  • Cut the spring onion, chop very finely and add. The same with the tomato, chop into small cubes and add to the bowl. Add the finely chopped chives.

  • Once we have all the chopped ingredients in the bowl, we take the lemon and squeeze its juice over it (this will also prevent the avocado from oxidizing, which makes it look pretty bad). Add a splash of vinegar, a splash of oil, and salt and pepper to taste. Mix well. Reserve in the refrigerator (we want it to be very cold).

For the salmon.

  • We begin by preheating the oven to 350ºF, meanwhile, we are going to prepare the salmon in the oven tray.
    Cut the onion into thin strips and crush the garlic.

  • Cut a piece of aluminum foil enough to wrap a loin of salmon, place the salmon on top, add salt and pepper on both sides, place it on a bed of onion and add a drizzle of oil, a drizzle of lemon juice and place a little dill and a crushed clove of garlic.
    (You can also add, once you have squeezed the lemon to take advantage of its juice, a couple of slices in each package, but do not forget to remove them before presenting once the tenderloin is done).
    f you like, you can also season with a pinch of Provencal herbs (thyme, rosemary, basil...).

  • Once our salmon loin is dressed, we close it well with the aluminum foil. Repeat the process with the remaining salmon loins.
    When we have all the loins in small packages of albal, we put them in the oven in the tray, about 20-25 minutes.

White rice

  • While you make the guacamole, you can put a ladle with a few drops of oil on the fire to cook the rice.
    When the oil is hot, add the previously washed bay leaf (be careful that it will splash if you don't dry it well), the crushed garlic and let it brown.

  • Once the garlic is browned, add the rice and cook it for a couple of minutes at the most.
    Then add the water (double the amount of rice you have added), add salt and let it cook.
    When it is soft, drain and set aside.

  • Back to the salmon. If the 25 minutes have passed, open one of the little packages and check that the salmon loin is well done inside (open it a little with a fork to check it).
    If they are done, remove the tray from the oven and open the albal packets. Remove the garlic and the sprig of dill.
    And your Salmon with Orange Guacamole is ready!

Notes

NOTE: For the white rice, you can cook it as you like. We fry the garlic a little with the bay leaves, and the rice before adding the water because it gives it a very good flavor.
For the presentation of the dish:
I like to put everything in the same dish, but differentiated. We will serve the salmon on a plate with the onion bed, (imagine that we divide the plate in three parts) next to it we will put some spoonfuls of the orange guacamole, and on the remaining side, some white rice. And let's eat!
