- 2 Potatoes (medium)
- 1/3 Cup Pancetta (or bacon)
- 2 Tbsp Mozzarella cheese
- Grated cheese (to taste)
- Olive Oil
For the Ranchera Sauce
- 2 Tbsp Whipping cream
- 1/2 Lemon
- 1/2 tsp Onion powder
- 1/2 tsp Garlic powder
- 1 tbsp Mayonnaise
- Salt
- Pepper
We begin by preparing the Ranchera sauce
In a bowl, mix the cream, the juice of half a lemon, the onion and the garlic powder. Add the mayonnaise, a little black pepper and salt (to taste). Mix well and reserve in the refrigerator.
2 Tbsp Whipping cream, 1/2 Lemon, 1/2 tsp Onion powder, 1/2 tsp Garlic powder, 1 tbsp Mayonnaise, Pepper, Salt
For the French fries
Peel the potatoes and cut them into regular sticks.Put in a pot with plenty of oil and fry until golden brown. Reserve on a plate with absorbent paper to remove excess oil. 2 Potatoes, Olive Oil
Cut the bacon into strips, not too big. In a frying pan with a drizzle of oil (or in the same pot where we have made the potatoes, removing the excess oil) we cook it until it is to taste.
1/3 Cup Pancetta
Place the potatoes in a baking dish, add the bacon strips and ranch sauce on top, a few cubes of mozzarella (to taste), and a little grated cheese.
2 Tbsp Mozzarella cheese, Grated cheese
Bake for about 3-4 minutes at 390ºF. Just enough to melt the cheese. Serve hot.
