Ingredients
  

  • 1 Chicken
  • 2 Potatoes
  • 2 Small onions
  • 3 garlic cloves
  • Thyme, rosemary and parsley
  • Olive oil
  • 1 Cup beer (you can substitute with a little white wine if you prefer)
  • Salt and Pepper

Instructions
 

  • We are going to start by preheating the oven, at about 430ºF for five minutes. Time that we will use to prepare the chicken in the oven tray and place the potatoes and onion.
  • In a mortar we are going to prepare the dressing. We are going to put the chopped garlic and the aromatic herbs with a drizzle of oil, crush it well in the mortar. Paint the chicken with this. Season the chicken with salt and pepper to taste.
  • Peel the potatoes and cut them into slices, not too thin. Do the same with the onion.
    Place the chicken in the oven tray, spread the potatoes and onion on the tray, and sprinkle with a little oil, salt and pepper.
  • Put it in the oven for half an hour at 370ºF. After that time, when you see that it begins to brown very lightly, pour a glass of beer over it and let it finish roasting. An hour, an hour and a half, depending on the power of your oven and the size of the chicken.
    Now you have your delicious and easy homemade roast chicken ready.
