For this recipe you can use olives with stone or already pitted. If we opt for the first option we will have to pit each olive. This is the only complication of the recipe, so you can save yourself this step by using pitted olives. Regarding the olives, although the most common for this recipe is to use black olives, you can innovate and make this olive pate using green olives.

- 300 g Black olives
- 1 garlic clove
- 60 ml Extra Virgin Olive Oil
- Oregano
- Thyme
- Crushed black pepper
- Salt

- As we have already mentioned, this recipe is very simple to prepare. To do this we will put the pitted olives in the blender glass.We add the rest of the ingredients except the olive oil, which we will add only a tablespoon, and beat well, until we get a fairly dense cream.
- Once everything is crushed, we are going to add the oil little by little while we continue beating, until all the ingredients are integrated.It is not necessary to add all the oil. When it is to your liking, serve. Your Olivada is ready.

Olivada keeps very well for several days in the fridge. You can make extra, or keep what you have left over by adding a thin layer of olive oil on top; and store it in the fridge covered with plastic wrap for up to 15 days.
