So, if you don’t want to risk it, you can always roast the garlic before preparing the pâté. This way it will have a softer and more delicate flavor and we will greatly reduce the spicy touch it has.
If you choose to roast it, simply wrap it in aluminum foil, having previously cut off the top of the head of garlic, and sprinkle it with a drizzle of oil and a pinch of salt. Wrap the aluminum foil well and bake for about 15 minutes, until the garlic is very tender and soft. In this way, we can now include it in our garlic and cheese pâté, but having given it a softer touch. You can add more garlic cloves than indicated in the recipe, taking advantage of the fact that it will not be too sharp.

Ingredients
- 4 cloves garlic
- 200 g cream cheese
- 100 g Parmesan cheese grated
- 2 tablespoons olive oil
- Salt
- pepper
Instructions
- We start by peeling and cutting the garlic cloves.
- In a blender or food processor, add the cheeses, chopped garlic, a dash of oil and a pinch of salt and pepper, to taste.
- We beat or grind well, until we obtain a homogeneous and smooth cream. Taste to make sure it is well salted. You can finish decorating with a few sprinkled Provencal herbs. Your garlic and cheese pâté is now ready.
