It is a dish based on cabbage, mashed potatoes and spring onions, all with bacon. It is a dish of Irish origin, very simple and perfect as a starter. Let’s go with the Colcannon recipe
Colcannon ‘s Recipe
To prepare this dish we can include bacon, which is how the original Colcannon is made. But you can omit this ingredient to make a healthier and vegetarian dish.
It is true that, personally, bacon is spectacular. If you feel like adding bacon, reserve a few strips and cook them a little longer to make them crispy. Add them at the end of the recipe when your dish is ready, you will see what a great touch it gives it! It will be delicious!
Colcannon recipe
Ingredients
- 4 potatoes
- 2 Cup Cabbage
- 2 spring onions
- 1/2 Cup Pancetta or Bacon (optional)
- 3 Tbps Butter
- 4 Tbsp Milk
- 2 Bay Leaves
- Salt
- Pepper
Instructions
- In a frying pan, with a little butter, cook the spring onions cut in strips together with the bacon. (If you do not add bacon or bacon, add a little salt to the spring onions).When the spring onions start to become transparent, add the washed cabbage in strips, add the milk and cover the pan. Cook over medium heat for about 10 minutes (or until the vegetables are tender).2 Cup Cabbage, 2 spring onions, 1/2 Cup Pancetta or Bacon, 3 Tbps Butter, 4 Tbsp Milk
- While the spring onions and cabbage are cooking, we are going to cook the potatoes with the bay leaves, to make a puree. Peel and dice them and cook them for about 20 minutes, until they are soft. Once cooked, remove the bay leaves and puree them, adding a tablespoon of butter to make it juicy and season the puree with salt and pepper.4 potatoes, 3 Tbps Butter, 2 Bay Leaves, Salt, Pepper
- Once the spring onions and cabbage are tender, add the mashed potatoes to the frying pan and mix everything well, on the heat, so that the mashed potatoes get warm. Serve immediately (it is a dish to be eaten hot) and garnish with some finely chopped chives and a small ball of butter on top of each plate.
