- 500 g Cherries Pitted
- 2 Tomatoes ripe
- 1 Cucumber
- 1 Red bell pepper
- 1 Garlic clove
- 50 g bread Day-old
- 300 ml Water
- 2 Tbsp Red wine vinegar
- 3 Tbsp Extra virgin olive oil
- Salt

- We begin by washing the cherries well and pitting them. We put them in the blender glass. Wash the tomatoes and the bell pepper and add them too, chopped.
- Peel the cucumber and the garlic, add them in the blender. Add also the piece of bread.
- Add the water, vinegar, oil and salt. Blend well until a homogeneous texture is obtained. Strain for a smoother result and serve well chilled. Now we have ready a wonderful cherry gazpacho.
How to pit cherries quickly and easily
Although pitting cherries to prepare this gazpacho can be a somewhat laborious task, we can simplify it a little if we have a cherry pitter. For very little money you will have a pitter that will help you in this task saving you a lot of time.
This utensil is nothing more than a small lever with a sharp tip that, when pressed, pushes the bone of the cherry when we press it, so that it is removed. But, if you do not have one of these, we can always use a straw to do the same effect.
