Do you know Shortbread? Also known as shortbread cookies, shortbread is a popular sweet typical of Scotland, and very appreciated in the United Kingdom. They have become so popular that even in the United States they have decided to create a day to commemorate these cookies. Therefore, every January 6 is celebrated as Shortbread Day. Although originally from Scotland, they are also well known in the United Kingdom, Denmark and Sweden. And more and more places are consuming them.
The most traditional Shortbread recipe, as they have been made for centuries, is measured in parts: For each part of white sugar, add two parts of butter and three parts of flour. Although nowadays we find a multitude of recipes, in which more ingredients are included or these quantities are modified.
Without a doubt, the best way to celebrate Shortbread Day is to bake a batch of these sweet cookies yourself.

After much research we have not found the creator of this day. Nor do we know why it is celebrated every January 6th. What we do know is that the celebration of these Scottish cookies was born in the United States. Place where almost all the gastronomic ephemeris are born.
Perhaps the fact that it is celebrated in the last days of Christmas has to do with the fact that it is a festive sweet, due to the cost of its ingredients, as we mentioned before.
Or, because it is also a magnificent gift according to tradition, on special dates such as Epiphany.
These cookies come from a much more humble and simple recipe, which did not include butter. Over time, as the recipe evolved, butter was added. Thus turning Shortbread into a much more delicate and tasty snack, but at the same time, a sweet not suitable for all budgets. Scottish shortbread cookies were a very exclusive product due to the price of their ingredients.
In fact, they were reserved only for special occasions, such as weddings, for Christmas, New Year’s Day…
