Every July 21st is celebrated the World Gazpacho Day. A cold soup made with raw crushed vegetables. This dish, icon of the summer in Spain and a standard of Mediterranean gastronomy, has achieved worldwide fame. And that is why, to commemorate him, every July 21 we celebrate his day all over the world.
Gazpacho is originally from Andalusia, although the place of its origin is not known with certainty. It derives from very old elaborations, which have given rise to dishes such as gazpacho, and others very similar such as salmorejo or ajoblanco.
This dish originated with a simple preparation of oil, vinegar and salt. This combination has been the precursor of many other dishes of the Mediterranean diet. And this mixture was elaborated to soften the bread of previous days. In this way, farmers and peasants could eat it even if it was from previous days.
Like all ancient recipes, over the years we have been changing the recipe every time. One of the most important changes was the incorporation of tomatoes. An ingredient that arrived in Europe after the discovery of America.
Although each house has its own recipe, the basic ingredients for this dish are tomato, onion or spring onion, green bell pepper, cucumbers, garlic, oil, vinegar and salt. And bread, although many times it doesn’t have to have it.

July 21, Gazpacho Day
As we were saying, this day serves to commemorate one of the most representative dishes of Spanish gastronomy. Well, this simple and humble soup is so popular that today it is a worldwide known recipe.
It is also a very nutritious, healthy and refreshing dish. Ideal for a light meal on the hottest days. Therefore, we encourage you to celebrate Gazpacho Day by preparing a good Andalusian gazpacho at home.
Spanish Gazpacho, quick and easy recipe
Ingredients
- 1 Kg Ripe Pear Tomatoes
- 1 Green Pepper
- 1 Cucumber
- 1 spring onion
- 1 Garlic clove
- 250 ml Water
- 1 Tsp Salt
- 2 Tbsp Vinegar
- 3 Tbsp Extra Virgin Olive Oil
- 4-5 Mint Leaves
Instructions
- Wash all the ingredients well. Peel the garlic and the spring onion, chop. Peel the cucumber and cut into cubes. Wash well the tomatoes and the bell pepper, remove the seeds from the pepper and cut them into pieces (it is not necessary to peel the tomatoes because once the mixture is crushed we will strain it).
- Put all the ingredients in a blender glass. Add the water, the oil, the vinegar, the salt and, if you want, the mint leaves (try it because it gives a great touch), and blend well until everything is homogeneous and there are no pieces left.
- Once ready, we pass it all through a fine strainer and reserve it in the refrigerator so that it is very cold at the moment of serving.
