- 1 head cauliflower
- 1 lettuce
- 1 cucumber
- 1 bell bell pepper
- 1 tomato
- 1 spring onion
- Extra virgin olive oil
- 1 lemon juice
- Salt
- Pepper
- Fresh parsley
Instructions
- Let's start with the cauliflower. We cut into small florets and, the stems, we cut them also in bite-sized portions. In a pot with water and a pinch of salt, we boil the cauliflower about 5 minutes, until tender but still crisp. Drain and set aside.
- In a bowl put the cauliflower, the lettuce leaves well washed and cut, add the chopped cucumber, bell pepper, spring onion and tomato, also diced.
- On the other hand, for the dressing, we are going to mix in an airtight container the oil, the lemon juice, a pinch of salt and pepper, to taste, and shake well. Drizzle the salad with this dressing and taste to make sure it is to our liking. Finish decorating with a little parsley and we have a delicious cauliflower salad ready!
